Who doesn't enjoy a colorful and healthy mix of fresh vegetables or fruits during these warm summer months?&amp;nbsp;&lt;br /&gt;&lt;br /&gt;&amp;nbsp;&amp;nbsp; Here in the United States salad making has become as easy as cutting open a few bags of pre-cut veggies and tossing them together in a nice large serving bowl. When you're on the run&amp;nbsp; or pressed for time its hard to pass up the convenience of packaged, pre-processed veggies or fruits. &lt;br /&gt;&lt;br /&gt;When you get home after a long day at work sometimes you may not be in the mood to wash and cut all those tasty salad ingredients.&amp;nbsp;&lt;br /&gt;&lt;br /&gt;Be careful. Even if that handy package of spinach or salad greens claims to be pre-washed and ready to eat, you might want to take the extra few minutes to thoroughly rinse your veggies.&lt;br /&gt;&lt;br /&gt;In our little town some of the local food stores offer a few brands of these pre-washed salad fixings. I'm as guilty as the next person about skipping the rinse and just tossing those tasty greens in the bowl.&lt;br /&gt;&lt;br /&gt;And then i stumbled upon the following government Food and Drug Administration warning:&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;FOR IMMEDIATE RELEASE&lt;/strong&gt; -- August 10, 2010 Salinas, California – Fresh Express is voluntarily recalling 2,825 cases of Veggie Lovers Salad with a Product Code of I208 and Use-by Date of August 10, 2010 out of an abundance of caution due to a possible health risk from Listeria monocytogenes. No other Fresh Express salads are included in the recall. No illnesses have been reported in association with the recall.&lt;br /&gt;Only the Veggie Lovers salad products with a Product Code of I208 and a Use-by Date of August 10 are included in the recall. Retailers and Consumers who have any remaining product should not consume it, but rather discard it. Retailers and Consumers with questions may call the Fresh Express Consumer Response Center at (800) 242-5472, Monday – Friday, 5 a.m. – 8 p.m., Pacific Time. Consumers can find the Product Code and Use-by Date in the upper right-hand corner of the package.&lt;br /&gt;This precautionary recall is being conducted to reach retailers as well as consumers. Consumers should check their refrigerators for Fresh Express Veggie Lovers salad with a Product Code of I208 and a Use-by Dates of August 10, 2010. If they have the product, they should immediately discard it. Retailers should check their inventories and store shelves to confirm that none of the product is mistakenly present or available for purchase by consumers or in warehouse inventories. Fresh Express customer service representatives are already contacting retailers and are in the process of confirming that the recalled product is not in the stream of commerce. Symptoms of infection may include fever, muscle aches, gastrointestinal symptoms such as nausea or diarrhea. If it spreads to the nervous system symptoms may include headache, stiff neck or confusion. The illness primarily impacts pregnant women and adults with weakened immune systems. Most healthy adults and children rarely become seriously ill.&lt;br /&gt;&lt;br /&gt;The precautionary recall notification is being issued due to an isolated instance in which one package of Fresh Express Veggie Lovers Salad yielded a positive result for Listeria monocytogenes in a random sample test collected and conducted by the Ohio Department of Agriculture.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;This is old news by now. Hopefully all those packages of salad mix mentioned in the above warning message are long gone.&lt;br /&gt;&lt;br /&gt;Don't let this happen to you. Buy whole fresh vegetables whenever possible. And what would Thanksgiving be like without a hearty serving or two of sweet potatoes? Not only are they packed full of healthy nutrients, they warm your tummy and tickle your tongue with all that sweetness!&lt;br /&gt;&lt;br /&gt;Enjoy some real Southern cooking with these delicious baked sweet potatoes.&lt;br /&gt;&lt;br /&gt;Here is all you'll need:&lt;br /&gt;&lt;br /&gt;6 or 8 good sized sweet potatoes&lt;br /&gt;1 cup brown sugar&lt;br /&gt;2 sticks real butter ( 1/2 pound )&lt;br /&gt;1/2 cup whole wheat flour ( or all purpose, white flour )&lt;br /&gt;1 cup water&lt;br /&gt;&lt;br /&gt;Preparation:&lt;br /&gt;Slice your sweet potatoes.&lt;br /&gt;Then Boil them for 15 - 20 minutes&lt;br /&gt;Butter the bottom of 3 quart casserole&lt;br /&gt;Add a layer of sliced sweet potatoes&lt;br /&gt;sprinkle on a layer of brown sugar and flour&lt;br /&gt;add some sliced butter&lt;br /&gt;add another layer or sweet potatoes&lt;br /&gt;and another sprinkling of flour and brown sugar&lt;br /&gt;add more thinly sliced butter&lt;br /&gt;&lt;br /&gt;If you have any potatoes left -&lt;br /&gt;add another layer and top off with brown sugar and butter.&lt;br /&gt;&lt;br /&gt;pour water over the top.&lt;br /&gt;&lt;br /&gt;Bake at 350 for 30 to 40 minutes.&lt;br /&gt;&lt;br /&gt;Serve up some real Southern hospitality and enjoy a big serving of these delicious sweet potatoes with your Thanksgiving feast. These are a wonderful addition to any meal! Salmon also offers a healthy dose of selenium, niacin and vitamins B12 and B6!  &lt;br /&gt;&lt;br /&gt;    Enjoy this heart healthy salmon dish flavored with a Mediterranean-style tomato, onion, and garlic sauce! &lt;br /&gt;&lt;br /&gt;Here is all you need:&lt;br /&gt;&lt;br /&gt;2 tsp  olive oil&lt;br /&gt;1  large onion, sliced&lt;br /&gt;1 can (16 oz)   whole tomatoes, drained (set the juice aside for later) and coarsely chopped&lt;br /&gt;1  bay leaf&lt;br /&gt;1  clove garlic, minced&lt;br /&gt;1 Cup  your favorite dry white wine&lt;br /&gt;1/2 C  of the tomato juice from canned tomatoes above&lt;br /&gt;1/4 C  lemon juice&lt;br /&gt;1/4 C  orange juice&lt;br /&gt;1 Tbsp  fresh grated orange peel&lt;br /&gt;1 tsp  fennel seeds, crushed&lt;br /&gt;1/2 tsp  dried oregano, crushed&lt;br /&gt;1/2 tsp  dried thyme, crushed&lt;br /&gt;1/2 tsp  dried basil, crushed&lt;br /&gt;1 tsp      black pepper ( more or less as you like )&lt;br /&gt;1 lb salmon fillets (cold water, wild caught  - never use farm raised fish)&lt;br /&gt;&lt;br /&gt;   1. Heat oil in large nonstick skillet. Add onion, and saute over moderate heat 5 minutes or until soft.&lt;br /&gt;   2. Add all the remaining ingredients except fish.&lt;br /&gt;   3. Stir well and simmer 30 minutes, uncovered.&lt;br /&gt;   4. Arrange fish in 10x6-inch baking dish; cover with sauce.&lt;br /&gt;   5. Start a weekly shopping carpool, share the cost of a taxi with friends, or ask a relative or neighbor for a ride.&lt;br /&gt;&lt;br /&gt;   Many people think that bigger is better. We are so used to value-sized portions—especially in restaurants—that it can be easy to eat more than our bodies need. Eating smaller portions will help you cut down on calories and fat (and just might save you some money too). Soluble fiber mixes with liquid and binds to fatty substances to help remove them from the body. Soluble fiber thus helps to lower cholesterol levels—thereby reducing the risk of heart disease. Good sources of soluble fiber are whole oats, barley, fruits, vegetables, and legumes (which include beans, peas, and lentils).&lt;br /&gt;&lt;br /&gt;Insoluble fiber goes through the digestive tract largely undissolved. Also called "roughage," insoluble fiber helps the colon function properly. Saving your money is easier when you prepare simple, easy to make foods at home. Eating healthy foods is easy and fun when you make them yourself!&lt;br /&gt;&lt;br /&gt;   The nutritional value of beans is time honored. And these baked beans taste delicious! Try some this weekend! ( Who has time to bake during the week? )&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Pick over and wash well one quart of small white beans;&lt;br /&gt; soak over night. &lt;br /&gt;&lt;br /&gt; In the morning, pour off the water and cover with cold water.&lt;br /&gt;&lt;br /&gt;After boiling one-half hour, drain them, and cover again with cold&lt;br /&gt;water.  &lt;br /&gt;&lt;br /&gt;Boil the beans again, until cooked, but not broken.  &lt;br /&gt;&lt;br /&gt;Put them in a baking dish.&lt;br /&gt;&lt;br /&gt;In the center of the baking dish place one pound salt pork (which has been parboiled and well gashed),&lt;br /&gt;&lt;br /&gt;add: one tablespoonful of molasses,&lt;br /&gt;     one dash of cayenne pepper, &lt;br /&gt;     black pepper to taste.&lt;br /&gt;&lt;br /&gt;Ordinarily the pork should salt the beans. &lt;br /&gt;&lt;br /&gt; Cover with part of the liquor in which the pork has been parboiled, and bake three hours. Whether you like guacamole or eating them plain - nutrition experts agree - the avocado is a great addition to any healthy eating plan! &lt;br /&gt;&lt;br /&gt;    Try this easy and nutritious avocado n bean wrap this weekend or or share with friends while you enjoy your favorite game!&lt;br /&gt;&lt;br /&gt;Here's all you need:&lt;br /&gt;&lt;br /&gt;2 chopped green or red bell peppers ( save money - use the green )&lt;br /&gt;1 peeled and sliced onion ( we like the red or purple onions )&lt;br /&gt;1 can (15 ounce) drained and rinsed black beans, 50% less salt&lt;br /&gt;2 chopped mangos&lt;br /&gt;1 lime, juiced&lt;br /&gt;1/2 cup chopped fresh cilantro&lt;br /&gt;1 peeled and diced avocado&lt;br /&gt;4 - 10 inch whole grain tortillas, fat free &lt;br /&gt;&lt;br /&gt;and easy to prepare:&lt;br /&gt;&lt;br /&gt;1. Sauté bell peppers and onion for 5 minutes over medium heat. Add beans, stir well. Reduce heat to low and simmer about 5 minutes.&lt;br /&gt;&lt;br /&gt;2. In a small bowl, combine mangos, lime juice, cilantro, and avocado. Reserve 1/2 mixture for topping.&lt;br /&gt;&lt;br /&gt;3. Try healthy snacks in between meals when you become irritable or feeling a little blue.&lt;br /&gt;&lt;br /&gt;    Here is an easy salmon dish sure to tickle your tastebuds and give you some heart healthy omega-3 fats - the good kind of fat!&lt;br /&gt;&lt;br /&gt;Taste the Mediterranean in this tangy tomato, onion, and garlic sauce.&lt;br /&gt;&lt;br /&gt;    * 1 lb salmon fillets&lt;br /&gt;    * 2 tsp olive oil&lt;br /&gt;    * 1 large onion, sliced&lt;br /&gt;    * 1 can (16 oz) diced tomatoes, drained (set the juice to the side)&lt;br /&gt;    * 1/2 C tomato juice (reserved from canned tomatoes)&lt;br /&gt;    * 1 bay leaf&lt;br /&gt;    * 1 clove garlic, minced&lt;br /&gt;    * 1 C dry white wine&lt;br /&gt;    * 1/4 C lemon juice&lt;br /&gt;    * 1/4 C orange juice&lt;br /&gt;    * 1 Tbsp fresh orange peel, grated&lt;br /&gt;    * 1 tsp fennel seeds, crushed&lt;br /&gt;    * 1/2 tsp dried oregano, crushed&lt;br /&gt;    * 1/2 tsp dried thyme, crushed&lt;br /&gt;    * 1/2 tsp dried basil, crushed&lt;br /&gt;    * to taste black pepper&lt;br /&gt;&lt;br /&gt;   1. Here is an easy to make chocolate and maple walnut delicacy sure to leave a smile on your lips! &lt;br /&gt;&lt;br /&gt; White of 1 egg,&lt;br /&gt; 3 tablespoonfuls of maple syrup ( use real maple syrup! ),&lt;br /&gt; 1 tablespoonful of water,&lt;br /&gt; sifted confectioner's sugar,&lt;br /&gt; 1 teaspoonful of vanilla extract,&lt;br /&gt; 2 or more squares of Baker's Chocolate,&lt;br /&gt; walnuts halves.&lt;br /&gt;&lt;br /&gt;Beat the egg white slightly.&lt;br /&gt;Melt the chocolate over hot water in a double boiler.&lt;br /&gt;add the syrup, water, sugar as needed,&lt;br /&gt;the melted chocolate, and the vanilla&lt;br /&gt;add a little more water if necessary. &lt;br /&gt;&lt;br /&gt;    Work with a silver plated knife and knead until thoroughly mixed.&lt;br /&gt;&lt;br /&gt;    Then break off small pieces of uniform size and roll them into balls, in the hollow of the hand, flatten the balls a little, set the half of an English walnut upon each, pressing the nut into the candy and thus flattening it still more. &lt;br /&gt;&lt;br /&gt;   The maple gives the chocolate a particularly nice flavor!&lt;br /&gt;&lt;br /&gt;   Share with family and friends for best results! Mix well.&lt;br /&gt;&lt;br /&gt;Stir flour mixture into butter and egg mixture just until moist.&lt;br /&gt;&lt;br /&gt;Add in the applesauce, dried cranberries, and chopped walnuts.&lt;br /&gt;&lt;br /&gt;Drop dough by heaping teaspoon several inches apart on a greased baking sheet. Maybe this year we’ll get our folks something they will actually use. Mom and Dad both love to cook. Their delightful culinary creations have warmed our tummies for years.  The pleasing aroma upon entering Mom’s kitchen is always a treat.  &lt;br /&gt;&lt;br /&gt;   Her spaghetti sauce is one of my favorites. The unmistakable aroma of Mom’s marinara simmering on the stove top signaled a delicious evening meal was in the works!  She’d start her preparations early in the afternoon. Washing tomatoes and herbs. Making sure her large sauce pan and large stock pot were spotless. Move loved making spaghetti and it showed! We loved coming home from school to that pleasing aroma.  &lt;br /&gt;&lt;br /&gt;    Growing up in a large, middle class family we weren’t even aware that spaghetti sauce came in a jar or can. It wasn’t until college that I discovered you could shell out a couple bucks and get a jar of  pre-made sauce.  I’m all for convenience and easy. And still nothing comes close to Mom’s homemade spaghetti sauce. &lt;br /&gt;&lt;br /&gt;    Dad’s pizza night  was  always a treat! He loved making Pizza and we loved eating it!  Growing up we didn’t know the ease and convenience of pizza delivery! Luckily we have  a  Dad who loves pizza and knows how to make an incredibly delicious  pizza pie!   &lt;br /&gt;&lt;br /&gt;   Maybe this Christmas I’ll get Mom another piece of copper-core cookware. She might enjoy a new Chef’s pan or maybe even another saucier. Try this easy and nutritious coffee cake at your next brunch or anytime!&lt;br /&gt;&lt;br /&gt;Here is all you need:&lt;br /&gt;&lt;br /&gt;1 egg&lt;br /&gt;1/2 cup low or nonfat milk&lt;br /&gt;1/2 cup yogurt, nonfat plain (or vanilla - if you prefer)&lt;br /&gt;3 Tablespoons extra virgin olive oil&lt;br /&gt;2 teaspoons grated lemon peel (yellow only)&lt;br /&gt;2 cups all-purpose flour ( make one cup Whole Wheat! )&lt;br /&gt;2/3 cup sugar&lt;br /&gt;4 teaspoons baking powder&lt;br /&gt;1/2 teaspoon salt&lt;br /&gt;1 1/2 cup frozen blueberries &lt;br /&gt;&lt;br /&gt;Now, for the topping you'll need:&lt;br /&gt;&lt;br /&gt;For the topping:&lt;br /&gt;1/2 Cup brown sugar&lt;br /&gt;3 Tablespoons chopped walnuts&lt;br /&gt;1/4 teaspoon cinnamon &lt;br /&gt;&lt;br /&gt;In a large bowl whisk together the egg, milk, yogurt, oil and lemon peel.&lt;br /&gt;&lt;br /&gt;Sift the flour, sugar, baking powder and salt onto the liquid ingredients. We only got to enjoy this sweet smell once a year - on Thanksgiving morning!  I never have figured out what she does to that turkey before she puts it in the oven. But it sure filled our humble home with a most pleasing aroma!&lt;br /&gt; &lt;br /&gt;    A couple days before Thanksgiving Dad would stop by the discount bread store and pick up a bunch of half price bread.  On the night before the big day we all got to  stay  up late  making toast and ripping it into small pieces to be used in the stuffing.  “That’s too big” Mom would admonish us when we got lazy and tried to toss in too large a piece.  Our old two-slice toaster got a real workout that Wednesday night before Thanksgiving.  &lt;br /&gt;&lt;br /&gt;    Long before you could walk into your local superstore and pick up practically any variety of pre-made pie, Moms everywhere made pies the day before Thanksgiving. Oven space was at a premium on Thanksgiving day itself ! Mom put “the bird” in the oven early so it would be ready to eat by Supper. &lt;br /&gt;&lt;br /&gt;   Then, early on Thanksgiving morning and after Mom had stuffed and started cooking the turkey she would turn on the TV and we’d watch the Macy’s Thanksgiving day parade. I can’t imagine a Thanksgiving morning without catching a glimpse of the numerous high school bands ,  incredibly big balloons and the famous Radio City Hall Rockettes. Long before Santa brought up the rear of the parade we’d start enjoying that wonderful scent.&lt;br /&gt;  &lt;br /&gt;    As the afternoon grew long Mom would prepare the cranberries and start washing and cutting the potatoes. She’d put out little bowls of pickles and olives – all would be long gone before the feast began!  An hour or so before she pulled that magnificent bird from the oven she’d prepare  some more stuffing.  &lt;a href="http://www.savin-ur-money.com/moms-homemade-stuffing.html"&gt;Mom’s homemade stuffing&lt;/a&gt; always turns out so good – it has long been my favorite part of the whole Thanksgiving meal! &lt;br /&gt;&lt;br /&gt;    Somehow, everything would come together just in time to hear her call to Dad – “It’s time to carve the Turkey”!  While Dad carved the moist and aromatic turkey meat we’d take turns mashing the potatoes and stirring the gravy! We always enjoy our evening walk this time of year taking in the crisp Autumn air. The wonderful variety of Halloween decorations adorning our streets is always a sight to behold. Ghosts hanging from trees. Pumpkins and mums gracing many a front porch. Lawns turned into make-shift graveyards. Goblins and ghouls on every block!&lt;br /&gt;&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;The Autumn colors are in full swing across many parts of North America this week. Rich shades of crimson and burnt oranges, Fading greens turning into bright golden  yellows. Trees ablaze with reds of every shade. Fields of milo painted in rustic brown.&lt;br /&gt;&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;    Soon, our schools, shopping malls and streets will be filled with happy and excited little trick-or-treaters sporting this year’s array of scary costumes! Carrying little sacks or plastic jack-o-lanterns to hold their  bounty of candy and popcorn balls!  School teachers and legions of volunteer Moms are busily planning this year’s Halloween party!&lt;br /&gt;&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;   Haunted Houses, Spooky Mansions, Corn mazes and Pumpkin patches offer Autumn fun for kids of all ages!  Fall is such a fun-filled and beautiful time of year.&lt;br /&gt;&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;   Autumn is the perfect season to savor the fruits of another bountiful harvest. Healthy eating is fun and easy during this wonderful time of the year. Apples of every variety fill store shelves. Squash, Peppers, tomatoes, and  fresh vegetables galore. Pumpkins are very inexpensive this month and quite nutritious too. Try some roasted pumpkin seeds after you carve up that Jack-o-Lantern!&lt;br /&gt;&lt;br /&gt; &lt;br /&gt;&lt;br /&gt;    So enjoy this special time of year &lt;a href="http://www.savin-ur-money.com/eating-healthy.html"&gt;eating healthy&lt;/a&gt; foods!
