Delicious Coffee Cake!



What would the Holidays be without a delicious coffee cake? Why wait for Christmas to enjoy this tasty treat? Try this easy and nutritious coffee cake at your next brunch or anytime!

Here is all you need:

1 egg
1/2 cup low or nonfat milk
1/2 cup yogurt, nonfat plain (or vanilla - if you prefer)
3 Tablespoons extra virgin olive oil
2 teaspoons grated lemon peel (yellow only)
2 cups all-purpose flour ( make one cup Whole Wheat! )
2/3 cup sugar
4 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cup frozen blueberries

Now, for the topping you'll need:

For the topping:
1/2 Cup brown sugar
3 Tablespoons chopped walnuts
1/4 teaspoon cinnamon

In a large bowl whisk together the egg, milk, yogurt, oil and lemon peel.

Sift the flour, sugar, baking powder and salt onto the liquid ingredients. Using a fork, stir gently, just until ingredients are combined.

Gently add the blueberries. Pour the batter into an 8- or 9-inch baking pan coated with nonstick spray.

In a small bowl combine the topping ingredients. Sprinkle evenly over the cake batter.

Bake at 400 degrees for 30 to 35 minutes ( on the center rack ) or until the top is lightly browned. ( Or it passes the toothpick test - insert a toothpick in the center. If it comes out clean - you're all set! )

Allow the cake to cool in the baking pan for 5 or 10 minutes. This delicious coffee cake tastes great served warm. Or, wrap and freeze some for a late-night treat later!
