Summer Salads

    Summer means Salads for many a veggie-lover! Who doesn't enjoy a colorful and healthy mix of fresh vegetables or fruits during these warm summer months? 

   Here in the United States salad making has become as easy as cutting open a few bags of pre-cut veggies and tossing them together in a nice large serving bowl. When you're on the run  or pressed for time its hard to pass up the convenience of packaged, pre-processed veggies or fruits.

When you get home after a long day at work sometimes you may not be in the mood to wash and cut all those tasty salad ingredients. 

Be careful. Even if that handy package of spinach or salad greens claims to be pre-washed and ready to eat, you might want to take the extra few minutes to thoroughly rinse your veggies.

In our little town some of the local food stores offer a few brands of these pre-washed salad fixings. I'm as guilty as the next person about skipping the rinse and just tossing those tasty greens in the bowl.

And then i stumbled upon the following government Food and Drug Administration warning:

FOR IMMEDIATE RELEASE -- August 10, 2010 Salinas, California – Fresh Express is voluntarily recalling 2,825 cases of Veggie Lovers Salad with a Product Code of I208 and Use-by Date of August 10, 2010 out of an abundance of caution due to a possible health risk from Listeria monocytogenes. No other Fresh Express salads are included in the recall. No illnesses have been reported in association with the recall.
Only the Veggie Lovers salad products with a Product Code of I208 and a Use-by Date of August 10 are included in the recall. Retailers and Consumers who have any remaining product should not consume it, but rather discard it. Retailers and Consumers with questions may call the Fresh Express Consumer Response Center at (800) 242-5472, Monday – Friday, 5 a.m. – 8 p.m., Pacific Time. Consumers can find the Product Code and Use-by Date in the upper right-hand corner of the package.
This precautionary recall is being conducted to reach retailers as well as consumers. Consumers should check their refrigerators for Fresh Express Veggie Lovers salad with a Product Code of I208 and a Use-by Dates of August 10, 2010. If they have the product, they should immediately discard it. Retailers should check their inventories and store shelves to confirm that none of the product is mistakenly present or available for purchase by consumers or in warehouse inventories. Fresh Express customer service representatives are already contacting retailers and are in the process of confirming that the recalled product is not in the stream of commerce. Although limited in number, the cases were distributed by Fresh Express to 13 states with the potential for redistribution by customers to an additional 14 states (see listing).

Listeria monocytogenes is a bacterium that can cause foodborne illness in a person who eats a food item contaminated with it. Symptoms of infection may include fever, muscle aches, gastrointestinal symptoms such as nausea or diarrhea. If it spreads to the nervous system symptoms may include headache, stiff neck or confusion. The illness primarily impacts pregnant women and adults with weakened immune systems. Most healthy adults and children rarely become seriously ill.

The precautionary recall notification is being issued due to an isolated instance in which one package of Fresh Express Veggie Lovers Salad yielded a positive result for Listeria monocytogenes in a random sample test collected and conducted by the Ohio Department of Agriculture.


This is old news by now. Hopefully all those packages of salad mix mentioned in the above warning message are long gone.

Don't let this happen to you. Buy whole fresh vegetables whenever possible. And if you're like us and enjoy the time saving convenience of these packaged veggie mixes, Always take the extra minute or two to wash your veggies!

Tasty Three Bean Soup


Winter is a great time for some warm and nutritious soup. Save your money and your waistline making some healthy and tasty soup for your family on one of these cold Winter days! Make a bunch and set some aside in your freezer for an easy lunch later in the week!

Here is a delicious (and good for you) 3 bean soup:

Here is all you need:
2 cans (15 oz) diced tomatoes
3 cups water
1 tsp chili powder
1 can (15 oz) kidney beans, drained
1 can (15 oz) black eyed peas, drained
1 can (15 oz) garbanzo beans, drained
1 cup of lentils, rinsed well
1 can (15 oz) whole kernel corn, drained
1 can (15 oz) carrots, chopped
1 medium onion, chopped
1-1/2 tsp chopped garlic
1 can (6 oz) tomato paste
1 Tbsp Dijon mustard
1 tsp pepper
1 tsp ground cumin
1 tsp dried oregano
1 tsp dried basil

Combine all the ingredients in a big stainless steel stock pot.

Bring to a boil and then simmer for 25 or 30 minutes.

Try this tummy warming soup with some fresh out of the oven corn bread! Or grab some whole wheat bread and make some grilled cheese sandwiches to serve on the side!

ThanksGiving Muffins


Cranberries are a traditional Thanksgiving favorite. The pleasing aroma of cranberries will be widespread this Thanksgiving! Try these incredible Cranberry and Pumpkin muffins for a heart snack all weekend! Not only are these tasty treats chock full of healthy vitamins and antioxidants, they're really easy to make! Share some of these low-fat treats with your Holiday guests this year!

Here is all you need:

2 cups flour - use whole wheat if you have it
1 cup brown sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
3/4 teaspoon allspice
1/3 cup extra virgin olive oil
2 eggs
3/4 cup canned pumpkin
2 cups fresh or frozen chopped cranberries

And easy to prepare:

1. Preheat oven to 400 degrees.

2. Sift together dry ingredients (flour through allspice) and set aside.

3. Beat oil, eggs, and pumpkin together until well blended.

4. Mix the pumpkin mixture to the dry ingredients all at once. Stir until moistened.

5. Add in chopped cranberries.

6. Spoon into paper lined muffin cups.

7. Bake at 400 degrees for 22 minutes.

Carol's Sweet Potatoes

Thanksgiving time brings out the best of our family traditions and favorite foods! And what would Thanksgiving be like without a hearty serving or two of sweet potatoes? Not only are they packed full of healthy nutrients, they warm your tummy and tickle your tongue with all that sweetness!

Enjoy some real Southern cooking with these delicious baked sweet potatoes.

Here is all you'll need:

6 or 8 good sized sweet potatoes
1 cup brown sugar
2 sticks real butter ( 1/2 pound )
1/2 cup whole wheat flour ( or all purpose, white flour )
1 cup water

Preparation:
Slice your sweet potatoes.
Then Boil them for 15 - 20 minutes
Butter the bottom of 3 quart casserole
Add a layer of sliced sweet potatoes
sprinkle on a layer of brown sugar and flour
add some sliced butter
add another layer or sweet potatoes
and another sprinkling of flour and brown sugar
add more thinly sliced butter

If you have any potatoes left -
add another layer and top off with brown sugar and butter.

pour water over the top.

Bake at 350 for 30 to 40 minutes.

Serve up some real Southern hospitality and enjoy a big serving of these delicious sweet potatoes with your Thanksgiving feast. These are a wonderful addition to any meal! Make some extra and share some with your family and friends!
